Most people land on this question for the same reason: the nonstick pan is scratched, and they have read what comes off it. In 2022, Yunlong Luo, Cheng Fang and colleagues at the University of Newcastle and Flinders University in Australia used Raman imaging to scan the surfaces of nonstick pots. Their estimate, published in Science of the Total Environment, was that a single surface crack can release about 9,100 plastic particles, and a broken coating about 2.3 million micro- and nanoplastics. The paper itself concludes that thousands to millions of Teflon particles might be released during a mimic cooking process. Teflon is PTFE, a member of the PFAS “forever chemical” family, which is why Dr. Fang called the particles a possible health concern that needs investigating.

Carbon steel and cast iron are the two classic answers, and on that particular question they tie. Both are bare iron alloys. The only thing between the food and the metal is seasoning: a thin layer of cooking oil that heat has bonded to the surface, not a synthetic coating that can crack and flake. So the choice between them is not about which one is plastic-free. Both are. It comes down to seven practical differences: what the metal is, how much it weighs, how it handles heat, what it does with acidic food, how it treats an egg, how it cleans, and what it costs.

Bottom line: If you are replacing a nonstick skillet you use for eggs, vegetables and quick weeknight cooking, buy a thin carbon steel pan — the Matfer Bourgeat is the lightest of our four picks at 4.88 lb. If you want one pan for searing, baking and the occasional tomato sauce, or you are spending under $30, buy Lodge cast iron. Whichever you choose, the safety move is the same: keep it seasoned, keep long acidic simmers out of it, and pair it with a wood or steel spatula so you do not bring plastic back to the stove.

Carbon Steel vs Cast Iron: What Is Actually Different?

Mostly the carbon, and how the pan is formed. Both metals are overwhelmingly iron. Cast iron is an iron alloy containing roughly 2 to 4 percent carbon, melted and poured into a sand mold, so the pan and its handle come out as one thick casting. Lodge and Field Company both make their skillets this way in the United States. Carbon steel pans are pressed or spun from a flat sheet of steel with far less carbon; de Buyer describes its Mineral B pans as 99% iron and 1% carbon, 2.5 to 3 mm thick, with the handle riveted on afterward.

That difference in carbon explains most of what follows. More carbon makes cast iron hard and easy to cast into thick shapes, but brittle enough to crack if it is dropped on tile or doused with cold water while hot. Lower-carbon steel can be rolled thin, which makes a lighter, more responsive pan that bends before it breaks. The cooking surface on both is iron, and that shared chemistry is why their safety profiles look so similar.

Is Carbon Steel Lighter Than Cast Iron?

Usually, but only when the steel is thin, and this is the difference most comparisons get wrong. Matched as closely as the published specs allow, Matfer Bourgeat's 11⅝-inch carbon steel pan weighs 4.88 lb on Matfer's own spec sheet, while Lodge's 12-inch cast iron skillet is listed at 7.9 lb. That is 3 lb less, close to 40% lighter, for a pan you will lift, tilt and shake every day. Against Field Company's No.10, a cast iron skillet machined specifically to be lighter, the same Matfer is still about a pound lighter at the identical 11⅝-inch diameter.

Thick carbon steel tells a different story. de Buyer makes Mineral B at 2.5 to 3 mm so it resists warping, and it lists the 10¼-inch pan at 4.5 lb, only half a pound under Lodge's 10¼-inch cast iron skillet at 5.0 lb. The 12½-inch Mineral B is listed at about 6 lb. If weight is the reason you are choosing carbon steel, check the listed weight of the exact pan before you buy, not the material.

Do Carbon Steel and Cast Iron Leach Iron Into Food?

Both do, because the surface touching your food is iron, and the amount depends far more on what you cook than on which pan you own. The standard reference is a 1986 study by H.C. Brittin and C.E. Nossaman in the Journal of the American Dietetic Association. They cooked 20 foods in iron and non-iron utensils, analyzed the iron content by atomic absorption spectrophotometry, and found that 90% of the foods contained significantly more iron when cooked in iron utensils. Three factors drove the amount: how acidic the food was, how wet it was, and how long it cooked. Different skillets also gave different results, which the authors attributed to how much each pan had already been used.

A follow-up by Y.J. Cheng and Brittin in the Journal of Food Science in 1991 asked whether a pan eventually stops giving up iron. They cooked applesauce and spaghetti sauce in the same iron skillet 50 times, and the food cooked in iron stayed higher in iron than food cooked in a non-iron pan through all 50 uses. Seasoning builds up, but it does not seal the metal off completely.

One honest gap: no published study we could find has measured carbon steel against cast iron head to head for iron transfer. The chemistry says to expect the same direction from both, since each cooking surface is almost pure iron under the same kind of oil seasoning. What the makers' acid warnings tell you is that carbon steel's thinner seasoning is easier to strip, which exposes bare iron sooner.

Is That Extra Iron Good or Bad for You?

For most people it is a small bonus, and for a few it is a genuine reason to choose different cookware. The recommended daily intake is 8 mg for men and for women over 50, and 18 mg for women aged 19 to 50, and the U.S. National Library of Medicine's MedlinePlus lists cooking in a cast iron skillet as one way to increase the iron your food provides. The strongest evidence that the effect is real comes from a randomized trial of 407 young children in Ethiopia, published in The Lancet in 1999 by A.A. Adish and colleagues at McGill University. Over 12 months, hemoglobin rose 1.7 g/dL in children whose food was cooked in iron pots, against 0.4 g/dL in the aluminum-pot group, and the iron-pot group had lower rates of anemia. A 2019 systematic review in PLOS One was more cautious: across 11 studies, statistically significant improvements appeared in 4 of the 8 studies of iron pots, with results depending heavily on whether families actually used them.

The exception is hemochromatosis. The National Institute of Diabetes and Digestive and Kidney Diseases describes it as a disorder in which the body absorbs too much iron from the diet, which can build up and damage the liver, heart, pancreas and joints. If you or someone you cook for has it, do not make bare iron your everyday pan, especially for acidic dishes. Does Seasoning Make Either Pan Safer?

Measurably, yes, at least for cast iron. In 2020, Y.J. Koo and colleagues at Korea University tested stainless steel, aluminum, copper-alloy and cast iron kitchen utensils for arsenic, cadmium, chromium, nickel and lead released into food simulants, publishing in Food and Chemical Toxicology. Release depended strongly on acidity and tended to fall with repeated use. The key result for this comparison: oiling cast iron cookware cut the release of arsenic by 66%, cadmium by 83%, chromium by 71% and nickel by 15% into acidic simulants. The authors judged the overall exposure from metal kitchen utensils unlikely to pose a health risk.

The study did not test carbon steel, but the protective layer is the same thing on both pans, so the practical rule carries over. After every wash, dry the pan on a low burner and wipe on a very thin film of oil. That habit is what keeps food off bare metal, and it is also what turns either pan into a usable replacement for nonstick.

Which Is Better for Eggs and Everyday Cooking?

Carbon steel, once it is seasoned. Its surface is rolled smooth, its sides flare so a spatula slides under an omelet, and a thin pan is light enough to tilt and shake with one hand. de Buyer, a French cookware maker founded in 1830, claims a seasoned Mineral B is as slippery as new nonstick. That is a maker's claim, and it is only true after several rounds of seasoning and high-heat cooking. On day one, a carbon steel pan sticks.

A standard sand-cast skillet like Lodge's has a pebbly texture you can see in the photo below, and it needs a well-built seasoning before eggs release cleanly. Field Company machine-polishes its cast iron to recreate the smooth surface of vintage American skillets, which closes much of that gap, at roughly eight times the price.

Which Is Better for Searing, Baking and Tomato Sauce?

Cast iron. Its mass stores heat, so a steak does not drop the pan's temperature when it lands, and it goes from stovetop to oven without fuss for cornbread, frittatas and roast chicken. It is also the only one of the two whose maker allows acid: Lodge says you can cook acidic ingredients in a well-seasoned skillet, but should not leave them directly in cast iron for more than about 45 minutes, and should clean the pan promptly afterward. Carbon steel makers draw a harder line. de Buyer tells owners to avoid acidic foods because they strip the seasoning, and Matfer's listing says not to use its pan with lemon juice, vinegar or tomato sauce at all. de Buyer also limits Mineral B to short stints in the oven at 400°F.

Put together with the iron studies above, that points to the same safe habit for both metals: all-day braises and long tomato simmers belong in enameled cast iron or stainless steel.

How to Keep Either Pan Plastic-Free

The pan is only half of the swap.
