Why it's safe for your family

What to avoid instead

Avoid plastic pantry containers for anything oily or acidic, and avoid jars whose metal lids have a plastic liner sitting against a ferment for months. If you are canning specifically, use jars and lids rated for your canning method — a bail jar is for storage and fermentation, not a substitute for tested canning procedure.

Common questions

Can I use these for water-bath canning?
Follow tested canning guidance rather than a product page for that. Bail-and-gasket jars are excellent for dry storage, refrigeration and fermenting; shelf-stable canning has its own tested procedures and equipment requirements, and it is not a place to improvise.
How long does the rubber gasket last?
A season or two of regular use before it stiffens. Replacements are inexpensive, and a gasket that no longer springs back is the reason a jar stops sealing — replace it before assuming the jar has failed.
Why glass rather than a good plastic container?
Because pantry contact is long. A container holding oil, vinegar or a salty ferment for months is the opposite of a quick lunch box: time and chemistry are both working. Glass simply does not participate.
