Why it's safe for your family
- Carbon steel is a solid iron-and-carbon alloy with no coating applied to it — the release surface is seasoning, which is polymerized oil you build yourself.
- Because seasoning is just cooked-on oil, there is nothing synthetic in the release layer and nothing that can fail: if it wears, you re-season rather than replace the pan.

Is this really PFAS-free? Yes — and here's why
Non-stick pans work by applying a fluoropolymer film to metal, and that film is the thing that scratches, degrades above its temperature limit, and eventually has to be thrown away. Carbon steel has no applied coating at all. What food releases from is seasoning — oil polymerized onto the steel by heat — so the release layer is cooked oil, and if it wears you simply rebuild it.
